Warm chickpea, kale, and avocado brunch salad

Although I suppose this is technically a salad, I actually love to have it for breakfast. I heat everything together the day before and re-heat in the microwave in the morning. It’s packed with super ingredients which are nutritious and filling, and contains 3 of your 5 a day in one meal.- more if you add something like tomatoes, spinach, or seeds on top. Nutritional yeast provides vitamin B12, which everyone should be supplementing in their diets as it’s hard to get naturally nowadays. Flaxseeds are an important source of lignans and Omega 3 for vegans, so I recommend eating a tablespoon a day. This recipe is a great way to incorporate them into your meals.

Ingredients:

1 tin chickpeas, drained

2 handfuls kale/ greens

1 tbsp flaxseed

1/2 avocado

1 tbsp olive oil

Dash hot sauce

Sprinkle nutritional yeast to serve

Salt and pepper

Method:

  1. Heat a large frying pan and sweat the chickpeas and kale and oil together
  2. Saute until warm and aromatic
  3. Add the mashed avocado, flaxseeds, and seasoning, and serve
