The perfect recipe for a simple summer lunchtime, and full of goodness to last the rest of the day. This is great gently warmed through or cold straight out of the fridge. And all with storecupboard ingredients.
Serves: 1 as a main, 2 as a side
Prep: 5 minutes
Ingredients:
1 tin ready to eat green/ puy lentils
2 tbsp tomato puree
1 tbsp olive oil
1 tbsp lemon juice
Salt & pepper
Finely sliced spring onions, sliced radish, and watercress to garnish
Method:
Drain and rinse the lentils, and warm through either in a microwave or a pan. Stir in the rest of the ingredients, season to taste, and serve with the leaves, onions, and spinch.
