It’s finally June, and all the vegetables are here! It’s perfect time for tomatoes, sweet and ripe, grown in the UK. This is a fast, easy recipe for a light lunch, which tastes like you’re sitting on the patio of an Italian villa. I use ready made polenta because it’s easier, and you can add a whole host of toppings, like avocado, radishes, roasted courgette or aubergine, herbs, onions– you get the picture. Switch it up with whatever you fancy.
Serves 1:
Prep: 5 mins
Grill: 5 mins
6 thin slices poleta (already made)
Handful tomatoes
Balsamic vinegar
Olive oil
Salt and pepper
Optional additional toppings: pumpkin seeds, olives, avocado, basil, other cooked vegetables, radishes, caramelised onions
Method:
- Preheat grill on high heat
- Place slices of polenta alongside tomatoes on a baking tray
- Sprinkle the tomatoes with balsamic vinegar
- Sprinkle the polenta with a little oil, plus salt and pepper
- Grill for 5 minutes or until polenta is crispy and tomato skins are wrinkly
- Serve the tomatoes on top of the polenta with optional extras, a good glug of extra virgin olive oil, and a side salad
