Delicious as a side dish or with toast for lunch, this is an easy salty sweet fix. No oil in this recipe either, so it’s (almost) guilt free

Ingredients
160g mushrooms
Handful spinach
Dessert wine/ sherry/ port
Chia seeds and cashew Parmesan to garnish (optional)
Salt and pepper
Method:
1. Heat a pan and chop the mushrooms in halves or thirds, depending on the size
2. Turn down the heat to medium and add the mushrooms to brown
3. When the mushrooms have started to brown, add a good glug of wine and stir
4. When the mushrooms are soft and browned, turn off the heat and stir in the spinach until wilted
5. Add salt and pepper
6. Serve with a sprinkle of chia seeds or cashew Parmesan, on toast or as a side dish
