This is a great weeknight meal and only takes 20 minutes to put together. The flavours merge together and the cooking process maximises nutrition. One pan means less washing up too.
The secret to the cheesiness is in the nutritional yeast, which you can buy in tubs online or in Holland and Barrett. You could also add some vegan cheese at the end if desired
Ingredients (serves 4)
5 cloves garlic chopped fine
2 spring onions sliced
400g dry pasta
1 broccoli head, cut into florets
Handful Swiss chard or kale, sliced
2 tbsp mustard (whatever your preference )
3 tbsp flour
1 glass white wine
2 handfuls nutritional yeast
Knob dairy-free butter
Water to cover
Method:
1. Place pasta in pan and cover with water. Add salt, pepper and all other ingredients apart from the broccoli and Swiss chard.
2. Peace lid on pan and bring to boil.
3. Bring to boil then simmer for 5 minutes.
4. While pasta is simmering, chop broccoli and chard into bite size pieces
6. Add the vegetables and simmer, covered, for 10 more minutes, stirring occasionally. Add water to loosen if necessary.
7. Remove from heat and add nutritional yeast. Leave to rest for a few minutes and serve. Beka xx
