Invented as a BBQ side, this salad now features as one of my meal time staples. I always have carrots and sesame seeds in the house, and it’s super quick and easy to make. The ribbons impress any guest and really bring out the fresh, zingy carrot flavour.

My version has less ingredints, and no oil!
Ingredients (serves 2):
1 carrot
Handful sesame seeds
1 inch grated ginger
1 garlic clove, finely chopped
Sprinkle cayenne pepper
2 tbsp white wine vinegar
1 tbsp maple syrup
1 handful parsley
Method:
Peel the carrot lengthwise into ribbons and twirl into bowl.
In a small bowl, mix the syrup, vinegar, garlic, ginger, and sesame seeds, and season with the cayenne pepper to taste. Add a little salt if necessary.
Pour mixture over carrots and serve straight away.
