I live off avocado toast, because it’s the best. The millennial dream, the reason we can’t buy houses, totally worth it. Also it’s a beautiful vehicle for anything else you’re craving. This is one of my favourite recipes, however, and 2.5 of your 5 a day. Don’t forget the salt/lime.
Here, the basics are mashed avocado (seasoned with lemon/ lime juice and salt- more salt than you think!) and a grilled/ toasted slice of bread- I like to use nice seeded bread, depending what I can afford!
The extras I added here are:
sliced radishes
basil leaves
spinach leaves
green pesto
Pro tip: If you’re not feeling salad, then add some VEGAN CHEESE on top and grill for 5 minutes, then serving with chutney. Avocado and cheese on toast is INCREDIBLE and amazing comfort food.
