This is basically guacamole, but with mango instead. Great with Jamaican or BBQ food, it takes two minutes to make and your guests will be super impressed. Here’s one version with an Easy Peasy Vegetable Pastry!

Ingredients (serves 2):
1 mango
1 tbsp salt (at least!)
coriander OR basil leaves
juice of one lime (at least!)
1/2 red onion, finely chopped
Method:
Peel and chop the mango into small pieces- here’s a useful video thanks to Tesco: https://www.youtube.com/watch?v=wdEIw3NnVBQ. In a medium bowl, sprinkle in the salt, lemon juice, red onion, and shredded herb leaves. Mix together, and add more juice or salt to taste. Serve with anything and everything. One more of the old 5-a-day in a jiffy.
